First weekend in the new year and I had the awesome privilege of catering a fajita and salsa bar for a very special 50th birthday party. We love our customers and treat them all as though they are the most important people in the world….because they are!! This particular customer just happened to be someone who everyone in the OKC foodie world knows as she is a well-respected tv foodie personality on Freedom 43 TV. For her to let me cater her husband’s birthday….well, it was a most fantastic start to this new year!! Thank you, Katie Johnstonbaugh!! We decided on a fajita and salsa bar which included both grilled chicken and steak fajitas, grilled onions, red & green bell peppers and poblano peppers, a special in-house recipe of chipotle avocado ranch sauce, the typical toppings of shredded lettuce, cheese and sour cream, tortillas, chips, our house made fresh salsa and a black bean & corn salsa. All our recipes are in-house recipes made with lots of love and care. We believe our customers are worth it!
The executive board for Sooner State Bank and the employees at the Tuttle branch got to enjoy “A Taste of Italy” Christmas lunch! What a pleasure to serve them! Menu: Garden Salad, Farfalle Festival with Grilled Chicken & creamy Alfredo Sauce, Penne Pasta with Meat Marinara Sauce, oven roasted Tuscan Vegetable Medley, Buttery Garlic Bread, Dessert Shooters of Strawberrie & Cream and Chocolate Brownie Lush.
One of the most awesome groups of people that I have the privilege to know and hang out with….Oklahoma Networking Professionals. I also had the privilege of catering their Christmas Party this year hosted at the Sooner State Bank. Fun times, good food, and amazing friends! We decided on a variety of cold and hot hors d’oeuvres…this group is always willing to be my awesome taste testers! 🙂
Every year probably for at least the past 10 years, I have had the opportunity and humble privilege to help my dear friends who are also the Chi Alpha Campus Pastors at UCO in Edmond, with their annual Thanksgiving Dinner. The event has grown over the years from a few meeting in the XA house to presently being in the UCO Wellness Center and feeding approximately 300 to 350 (or so!) college students! A huge number of these students are international students who have never had an American Thanksgiving Dinner. What fun it is to serve them turkey and stuffing and alllll the typical side dishes that go with our traditional turkey day dinner! I hope they were as blessed as all the volunteers were who showed up to serve dinner to them. I love this annual tradition and it is definitely worth all the work it takes to prepare the food for such a crowd (many of whom come back for seconds and take to-go boxes for their roommates!).
