It's Fall, y'all ! The weather starts cooling off, we have a few chilly nights and bam.... I want SOUP! But not just any ole soup. I want comfort food without the excessive calories, if that is possible (and yes, it IS possible). I want flavor that makes my taste buds dance! I want passion and soul in my soup!! Ok, well, that last part might be a little much, but you get the idea. I don't do boring! I like my food to be exciting and interesting. Life is too short to eat boring food! So after looking to see what I might have on hand in the freezer and refrigerator... a Southwest Soup Bowl came to mind! OHH yum, my taste buds were dancin! It's really super easy and affordable. I hope you will try it or at least inspire you to do your own version!
Preparing a healthy, flavorful, NON-BORING meal can absolutely be super simple and fairly inexpensive! Those are some of my favorite words when making a meal for the family or even for just myself.... and as a bonus, it is a healthy option!! That combination seriously makes my heart happy!!!!! Turkey can typically be very bland tasting, so be fairly liberal with your seasonings when cooking that part of it...but if you're not sure how much, do a little at a time and once it has cooked thru, you can always taste and add more! Because it is a ground meat, make sure it is thoroughly cooked thru though!! So here's what you will need:
1 lb. Ground Turkey (choose the lean version which is the breast meat)
1 small Sweet Yellow Onion, diced
1 small Red Bell Pepper, diced
2 Cloves Fresh Garlic, crushed & fine minced
Extra Light Olive Oil
Adobo (latin spice blend)
Cajun Seasoning (I like Slap Ya Mama)
Lettuce (Either Iceberg or Bib Lettuce works well but iceberg is cheaper)
5 large Brussel Sprouts (yep I said brussel sprouts!) Chop into shreds
1 Roma Tomato, diced
Lite Sour CreamBe sure to wash all your vegetables (we recommend a vinegar water bath) before prepping them! Chop up onion, red bell pepper, fine mince cloves of garlic...saute in skillet in a scant Tbsp of extra light olive oil, season with a little bit of garlic salt, adobo seasoning, cumin, till a lil charred. Remove from pan. Add another Tbsp of olive oil to the skillet and saute 1 lb ground turkey with same seasonings as you just did with the veggies. I actually added a little bit of cajun seasoning...depending on how spicy you want it. Add sauteed red bell pepper and onion back into skillet to incorporate flavors. Let them get happy together! 😉 Done! I then loaded my lettuce wraps with baby spinach, shredded raw brussel sprouts (cut off the hard stem then slice into shreds), cilantro, and then the meat and veggie mixture. You can top it off with a squeeze of lime, a tablespoon of sour cream and a little diced tomatoes. Deeeelish and very little guilt!
Super Bowl Sunday was better known as "Souper Bowl" Sunday as we catered the Missions Lunch for Nichols Hills United Methodist Church! Menu: White Chicken Chili and Southwest Taco Soup with Soup Bar Toppings: Shred Cheese, Sour Cream, Roma Tomatoes, Cilantro, Red Onions, and Jalapenos. Toasted Slider Sammiches of Turkey & Provolone and Ham & Cheddar. Fresh Baked Cookies: Chocolate Chip, Chocolate Fudge Crinkles and Red Velvet Cookies.
One of my favorite events to cater (we do it almost monthly) is the Growth Track event at Highpointe in OKC. This month's menu: The Fajita & Salsa Bar! Flour & Corn Tortillas, Fajita Chicken with onions & peppers, marinated Fajita Steak with onions & peppers, Cilantro Lime Rice, Shred Mexican Blend Cheese, Sour Cream, Shred Lettuce, fresh Pico de Gallo, our signature Chipotle Avocado Ranch Cream, Chips and freshmade Salsa, Banana Pudding Dessert Shooters, Chocolate Fudge Brownies with a Caramel drizzle, Tea & Raspberry Lemonade, and our Coffee Bar! Muy Bueno!!
What an honor to cater for such as great organization as the YMCA! Their campaign kickoff begins their fundraising efforts and we were asked to cater their dinner. Menu: Fajita & Salsa Bar! Ever have one of those 'awwwww' moments? Yes, I had one of those moments at this particular event. It was certainly an honor to cater this lreception for a wonderful family and their family & friends. We provided vanilla cupcakes with marshmallow glaze icing, handmade cream cheese mints, fruit kabobs and strawberry cream dip, and blue raspberry lemonade.
Custom Gift Baskets? Yes! We do that too! During the holiday season, we were so excited to put together and deliver many different gift baskets of fresh baked cookies and goodies for our customers. Our favorite project though came on New Year's Eve when we delivered a van load of custom gift baskets to a client who was giving these as thank you gifts to his clients! We ordered bottles of wine from Waters Edge Winery (a new winery that is opening soon to the public in downtown OKC), did custom labels on the wine bottles bearing my client's logo and his thank you message, then we filled the baskets with a variety of different fresh baked specialty cookies and hand-crafted chocolate truffles! What an awesome way to say thank you to your amazing clients!! Whether its cookies, truffles, or both, or combine that with wine or fresh roasted coffee, we can help you make a heart-warming, lasting impression!
Wow, what an awesome night catering for some of my dearest friends!! And what better way than a surprise birthday party! We put out quite a spread with fresh baked Slider Rolls from a local small business, BBQ Chicken and Fajita Steak sliders, Chipotle Avocado Ranch Sauce, Fresh Salsa and Chips, Tortellini Skewers, a cheese log shaped into 50 (yep he's 50)! Dessert Shooters: Chocolate Bourbon Pecan Pie, Fresh Strawberries & Cream, and Brownie Chocolate Lush, a Beverage Bar with Tea and Lemonade, and our Coffee Bar!
What a great time delivering an office Christmas luncheon and customer appreciation for TeamLogicIT in OKC. We put out a spread of various slider rolls, deli tray of meats, cheeses, and sammich toppings, and a tray of a variety of specialty meats, cheeses and crackers, and proscuitto mozzarella basil spirals.
Downtown OKC is absolutely beautiful at night during the Christmas season! We had the privilege of catering a Christmas party right in the heart of downtown for APS Healthcare and boy did we put out a gorgeous spread! Every year, the Chi Alpha Ministries at UCO in Edmond, OK, prepares and serves a full-blown Thanksgiving Dinner absolutely free for the college students! We have been honored to a part of this amazing opportunity for over 10 years and have watched this annual event grow from just a handful of students gathering in the XA house to experience Thanksgiving dinner to serving 300-400 students in the UCO Wellness Center on campus. A large percentage of the students have been international students who have never had our traditional American Thanksgiving meal, so it has been so much fun to serve them and watch them pile up their plates! Menu: Ham, Roast Turkey, Dressing, Mashed Potatoes, Gravy, Sweet Potato Casserole, Green Bean Casserole, Corn, Rolls, Pies and Desserts, and Lemonade! Special props to the XA Campus Pastors and my good friends, Charlie & Dona Bunn, who give their time and lives to being there and ministering to the students on the UCO campus in every imaginable way. What a great ministry to help and support!
