What a beautiful wedding for an amazing couple! So very honored to cater this wedding reception at the Wings Event Center in Edmond, OK, for Amanda and Neil!! Our setup and presentation worked out beautifully too!! Not only did we have our signature Farfalle Festivale and Chicken Brochettes, but also, our hot Spinach and Artichoke Dip with Garlic Crostinis, and a fabulous fruit & veggie display with dips. A beverage bar with Raspberry Lemonade & Sweet Tea went alongside the Coffee Bar featuring Costa Rican Tarrazu La Pastora and Decaf Nutty Butterscotch Toffee with 3 creamers.

Catered Wedding Reception Fajita Style!

Who knew a fajita and salsa bar could look so pretty?! 🙂 We did!! We had the honor of catering a wedding reception for a beautiful couple, Anna and Joe, at an absolutely beautiful and unique venue, Festivities in El Reno, OK. The menu:  Steak & Chicken Fajitas with Onions & Peppers, Flour & Corn Tortillas, Toppings of Shred Cheese, Lettuce, Sour Cream, Pico de Gallo and our signature Chipotle Avocado Ranch Sauce, Chips with Mild and Hot Freshmade Salsas, a Beverage Bar with Raspberry Lemonade and Sweet Tea, a Coffee Bar with Costa Rican Tarrazu La Pastora and Decaf Nutty Butterscotch Toffee with 3 flavored creamers. Our Dessert Shooters were added to the ‘Cake & Dessert Table’ with our Strawberries & Cream, Dulce de Leche Crumble & Cream, and Brownie Chocolate Lush.

Our First Anniversary!!

This week was a monumental week for MJ’s Event Planning & Catering. Even though I have been doing event planning for so many different organizations and catering & preparing food for different events and groups of people for many many years, this week marked the one year anniversary of officially being in business for myself! I am so thankful for the incredible support and encouragement from friends and some key individuals who guided and advised me and yes, kicked me in the rear end quite a few times lol …yes I needed that too. I am thankful for the clients who have come my way and it was an honor to provide catering for them. To say thank you to all the amazing fans, I wanted to give back in some small way.  For a giveaway this week, 2 lucky winners were chosen who will receive some of our specialty cookies, along with a $20 gift certificate towards any catering. Our most popular buffet to cater? Without a doubt…the Fajita & Salsa Bar! I do believe its the one I most enjoy making as well! The steak and chicken is seasoned and marinated, then grilled and sliced. The salsas are made from fresh ingredients….nothing store bought or canned here! And of course, the popular MJ’s kitchen recipe, Chipotle Avocado Ranch Sauce! Ohhhh yum. This sauce is good on the steak fajitas or as a dip. Summertime Catering Fun!

Don’t you love the cold freshness and the bright colorfulness of fresh fruits and vegetables…the things that make summer eating feel healthy and good for your body? I know I do! Its kind of a precursor to all the comfort foods of fall that we look forward to but know will more than likely include a few extra pounds!! 😀 So here it is the end of August already and the Oklahoma temperatures lately have been hot after a seasonably mild summer. What better way to have some ‘end of summer’ activities (all activities involve food, right?) than to have some tropical and light fare for the palate?! I loved putting together this summer party spread for a drop-off delivery for a Ladies Bunco Party! Menu:  Chicken Salad with Bib Lettuce on Croissants, Garden Salad and Fresh Veggie Tray with Ranch & Honey Mustard, Fresh Fruits with a Pina Colada Fruit Dip and a Strawberry Cream Fruit Dip, Domestic & Imported Cheeses and Crackers, and Roasted Red Pepper Quinoa on Mini Zuchini Boats! This summer MJ’s Catering had the awesome opportunity to be part of a fundraising project to raise money for a group of teenagers from a church in OKC traveling to Orlando, Florida, to compete in a National Fine Arts Festival. The kids sold $10 drawing chances and a random ticket was drawn to win a Catered Dinner Party for 8 valued at over $140! This week, we had the wonderful opportunity to deliver the party to the winner, Micky Kilburn! He arranged for us to bring it to his office for lunch….I am sure the whole building could smell the yummilicous Fiesta Party comprised of our popular Fajita & Salsa Bar! Catering Drop Off Delivery Style!

We absolutely love catering and bringing smiles to our clients’ faces when they smell and taste the yummy creations we come up with!! On this particular day, we were honored to cater a Luncheon for a Women’s Reps Leadership Meeting…consisting of reps from all over the state of Oklahoma, at the home of the Oklahoma Women’s Director for the Oklahoma District Council.  This was a drop-off delivery so the food was delivered while they were meeting, and we had it set up hot and ready to serve at their designated lunch time. Menu:  Chicken Fajitas and Salsa Bar and included our Spanish Rice.  All our dishes are in-house recipes that we make in our catering kitchen! Catered a personal favorite…Asian Fusion Menu

We have the best clients ever and most certainly love having repeat business! What a wonderful compliment! We don’t take those things for granted and try to do extra things in return to show our appreciation. One of our clients regularly schedules us to cater the dinner for their Growth Track seminar, and it is always a pleasure to come up with the menu plan for them! This particular one, I decided to go with the Asian Fusion menu and it was a huge success. This is my personal favorite mainly because this is my heritage and holds a special place in my heart. What was on this night’s special menu? I’m so glad you asked! 😉  Asian Salad, Steamed White Rice, LoMein Noodles, Japanese Chicken Yakitori, Asian Steak Bite Skewers, and Homemade Chicken Egg Rolls with a house-made egg roll dipping sauce. Sliders Bar for a Going Away Party!

Once in awhile your path crosses with someone you never would have otherwise known! Such is the case for this special young lady, a foreign exchange student from Norway, who came to OKC, attended a year of school and graduated with the senior class at Putnam City North HS. I know it was bittersweet for her to go back home, but I know that she will always have family here who had welcomed her into their home and considered her their daughter while she lived here. Catering an Asian Fusion Menu!

What an honor and privilege to be asked to cater a very special Confirmation Party for a lovely young lady! When I met with this family to discuss menu options and she expressed her love for asian food, I was so thrilled! Not often am I asked for this type of menu and little did she know that I am actually half Japanese!! As we discussed the different dishes we could do, it made me happy to know that what I was offering was authentic recipes passed down to me from my incredible Japanese mother, who was by far the best cook I have ever met in my life. So in her memory (she’s been gone for 14 years now), I lovingly and happily created dishes that I knew would make her proud. This was one of the funnest menus I have had the privilege to do!! Asian Fusion Menu: Asian Salad, Japanese Gyoza, LoMein with veggies, Chicken Yakitori, Asian Steak Skewers, Pickled Carrots & Daikon, Steamed White Rice, and various sauces including our own spicy mayo recipe.

Catering the Growth Track events for Highpointe is always such a pleasure! What a great group of people and staff! Tonight was Italian night with the Farfalle Festival (a delicious dish of bowtie pasta with grilled chicken and bacon…oh my goodness…bacon…yup, all in a creamy alfredo sauce), Tuscan Chicken Bites with Marinara Sauce, a healthy fresh salad bar and buttery garlic bread, topped off with a gooey rich dulce le leche dessert.

Once in a lifetime, a girl turns 15….in the Mexican culture this mean party!!! A HUGE party! A Quinceanera is planned and dreamed about their whole lives much like we would plan a wedding (but much more fun!!). Being asked to cater such a wonderful event for this family was truly an honor. Let me introduce you to the Urbina family:  Martin & Clarissa, Emily and her 2 big brothers, Seth and Joey. They wear many, many, MANY hats including being pastors of Vida Victoriosa spanish church.

Words cannot tell you how much this family really means to me but I know they have invested much of their time and selves into so many young people including my own son over the course of his lifetime. Ok, back to this party! The Food (my part of this amazing event): Street taco bar with corn tortillas, shredded chicken and steak bites, spanish rice and beans, all the toppings, and a chips & salsa bar. Then there’s the ceremony, the cake, the mariachi band, the dj and music, the dancing, the pure fun and laughter with a couple hundred people. Truly, this was one of the funnest events I have ever been to in my life! I love being part of the happy events in people’s lives!! Catered Wedding Rehearsal Dinner for a Princess and a Cajun!

Fairy tales do come true….see, once upon a time, a beautiful Irish princess met a young Cajun man….their courtship endured the tests put before them and a decision was made, not in haste, but after an extended period of time…and finally a date was set! 🙂 So on Friday evening, March 22, 2013, I was honored to cater the wedding rehearsal dinner for said princess and cajun! Two beautiful families came together to celebrate and I got to see the sneak preview of a beautiful ceremony that would take place the following day….not to mention the food!! Oh yeh, that’s where I came in lol.  The menu:  Beef Tenderloin Kabobs, Chicken Kabobs, Oven Roasted Potatoes, Roasted Tuscan Vegetables, Hot Rolls, Salad, and Specialty Cookies and Hand-Crafted Chocolate Truffles! I am so happy for this couple and truly wish them the very best and a life of happiness together! ~ mj

Happy Pi Day!!

Mmmmmm pie….. okay, so I do know that pi and PIE are two totally separate things and only one of those do I understand. 😉 I’m sure you can guess it is the one that normally has crust and can hold any number of preferred fillings to satisfy the taste buds. Pie. One of those yummy delights that my sister never could master and I heard many horror stories of her throwing balls of pie dough across the room at her laughing husband and I’m most certain lots of curse words were uttered under her breath. He learned to either duck or stay out of the kitchen. My mother, on the other hand, was the master of pie dough. Actually, she was the master of everything and could pretty much win the grand prize on anything she made, but her pie crust was and always will be the best I have ever had.  Years ago when she was battling cancer and staying at my house as I cared for her, I decided that while she still could, she NEEDED to teach me her secrets to making the perfect pie crust. Even though I always held out hope that she wouldn’t leave this world or me behind, I somehow knew deep inside that it was now or never.  We spent time in my kitchen as she showed me and taught me and I practiced over and over. For some reason, this seemed REALLY important at the time. And honestly, I do not regret it in the least bit. It is some of the best memories I have of us together. Regardless to say, I now proudly make pie crust (much to the disgust of my sister who still cannot make pie crust to save her life) with the same confidence that my mom had. I think its perfect or as perfect as any pie crust can be that’s not my mom’s. I am happy with it anyway, and Lord knows, I am my worst critic! So there you have it. My pie story. And one of the fondest, most cherished memories I have with my mom. Now, every time I make a pie, I look to heaven and thank my mom for her undying patience and for teaching me the simple things in life that mean so much now. Oh what fun to cater for a group of ladies that get together for amazing food and spend a competitive evening together playing bunco! For this particular night, the host house asked me to cater and we decided to custom create a special menu:  Grilled Teriyaki Lime Chicken Kabobs, Red Pepper Quinoa & Brown Rice Stuffed Zuchini Boats, Garden Salad, Hot Rolls, and trays of Specialty Hand Crafted Chocolate Truffles and Specialty M-Jamma Cookies & Chocolate Dipped Shortbread Cookies. The meal was very healthy and delicious….but that only gave more room for the delectable decadence of the truffles and cookies. See how that works?? 😉  Para la Vida Loca! Catering the “Fan Favorite” Fajita & Salsa Bar!!

What is the absolute most popular thing we cater right now?? The infamous “Fajita and Salsa Bar”!! For this particular Growth Track Seminar event at Highpointe, we did grilled Steak Fajitas with all the yummmmmmmy toppings including a house recipe Chipotle Avocado Ranch Sauce. Also on the menu as an extra…Chicken Fajita Stuffed Sweet Peppers (OHH yes, these are amazing if I do say so myself!), and then of course, Fresh Salsa, as well as, a Black Bean & Corn Salsa. And then there is dessert….oh…yes. I made Red Velvet Crinkle Cookes and then…and then….oh my goodness… and then…I created and served up a brand new dessert shooter for this event…Dulce de Leche Cheesecake Dessert Shooter, making my own homemade dulce de leche caramel. It was aahhhhhmazing!!!! Can you tell how much I loved this??!! Honestly, it is so much fun to create new recipes using the freshest of ingredents and then to serve them to the most awesome people on the planet. Chocolate Dreams

I LOVE CHOCOLATE.  Ok, yes that is not like a huge major news flash because I mean, really, who doesn’t??!! 😉 Yes, yes, I know there are a few exceptions to that statement but I always wonder what in the world is wrong with them? lol I’m just kidding. Kind of.  See, anyone who knows me, knows that I am a chocolate lover…dark chocolate, milk chocolate, white chocolate…it really doesn’t matter! I have learned moderation over the years for obvious reasons, and only need (notice I said NEED) maybe a small bite of chocolate a day and I’m one happy camper who can conquer the day.  740976_10151414353689343_1036235381_oMany MANY many years ago, my best friend and I tried our hand at starting a chocolate candy business. We had so much fun playing with chocolate and the various molds and recipes.  I remember working endless hours (and days) filling a gazillion orders before certain holidays…hard work? yes. But they are some of my best memories of good times EVER. Even though we were successful at it, loved doing it, and had dreams of opening a full-fledged business, we were so young and clueless with no one to encourage us or advise us. But mostly we were broke…and those dreams faded away.  Recently, as I began playing with various chocolate truffle recipes, doing taste-testings, playing with chocolate candy molds that could be used for the truffles, searching for the perfect packaging…my mind immediately went back to those fabulous chocolate days. My heart smiled as I painted chocolate into molds and memories of my dear friend and I came flooding back (I hope she is reading this and knows how much I still love her and all the good times we had back in the day!). Over the past 2 weeks, I have made in excess of 600 specialty hand-crafted chocolate truffles, all made with love and special care….and I realize that I love chocolate even more than ever!! I think I mostly love it when it makes people smile though. That’s really the reason…its not about me…its about others and bringing an unexpected pleasure for them to enjoy.  And that, my friends, is what brings joy to my chocolate dreams. ~~ <3 Mj

Valentine’s Week Craziness!

Valentine’s week was covered in CHOCOLATE! mmmm Well…that is not a bad thing! After hand-crafting approximately 500 chocolate truffles and several dozen assorted signature and hand-crafted cookies….it was delivery day! We made deliveries all over Edmond, OKC, Moore and Norman! The most rewarding part?? Seeing the surprised and excited faces when we knocked on the door or arrived at their place of business, and hand delivered a special Valentine’s package! We delivered everything from client appreciation boxes filled with chocolate truffles to specially decorated combinations of cookies and truffles. What a joy to make people smile!! Yes, that is why we love doing what we do!! =) We love smiles. ~mj

A Valentine Banquet for the Young at Heart!

Valentine’s Day…a day when thoughts turn to love and sweet things. This doesn’t just apply to young people, married people or even to just couples in love, this applies to everyone and sometimes it is more about the friends and the memories of years past. This particular Valentine’s, we catered a very special Valentine’s Banquet hosted by a ‘More Mature Ministries’ group. There were lots of beautiful people there…many of whom had been friends for many, many years but may not have even seen each other since the last Valentine’s dinner or sadly since the last funeral. But on this special night, they gathered together singing, laughing, eating, and sharing memories. What a beautiful sight and another evening to add to their memory collection! =) “…till we meet again..”

Our first ever giveaway was a huge success and I absolutely loved the participation and response from fans and new fans!!
